1 1/2 cups Pepe's Chicharrones, crushed
2 Tbsp. cornmeal
1 tsp. cinnamon
1/2 cup cream
1/2 tsp. vanilla extract
Oil for frying
Heat oil in a skillet to medium.
Combine crushed pork rinds, cornmeal, cinnamon, and cream.
Mix in eggs and vanilla extract.
Add pancake mix to skillet and press flat.
Cook for 2 minute on each side until golden.
Serve hot with syrup.
